Ingredients
- 2 tbsp neutral oil
- 1 onion, diced
- 1 lb chicken thigh
- 2 carrots, 2 potatoes
- 1 package Japanese curry roux
- 4 cups chicken stock
Steps
- Saute onion until deeply soft.
- Brown chicken, then add vegetables.
- Add stock and simmer until tender.
- Dissolve roux off heat, then simmer to finish.
